Nixtamalization is the traditional Mexican process for the production of corn tortillas. In this process the corn is cooked in water and a calcium solution and left to rest during the night. Done that, the cooked grain, known as nixtamal, is washed and grounded in a rock to get the dough to prepare tortillas. Moctezuma brings to Europe the best tortillas.
